Christmas eve food prep 2015 using the Filipino Microwave aka La Caja Pinoy

It’s Christmas eve 2015 and I’m setting up the Filipino Microwave, aka La Caja Pinoy to roast 6 large slabs of beef ribs and 4 large slabs of pork spare ribs. It’s cold enough outside that the meat will stay in the roaster overnight. I plan to smoke the meat using the A-maz-n pellet pellet smoker. Cook temp should be around 275 for 5 to 6 hours. After 4 hours, I plan to wrap them in Aluminum foil and roast for another 1-2 hours till the meat starts to fall off the bone!
