chocolate fudge (vegan & gluten-free) Something Vegan Christmas Treats Week

1 1/2 cups organic sugar
1/3 cup unsweetened cocoa powder
3/4 cup almond milk
3 Tbsp. vegan margarine
1/2 tsp. vanilla extract
A pinch of salt
To a large pot, add sugar, and cocoa powder. Stir until well combined. Add almond milk, and stir well. Stir constantly over medium heat. Once it begins to boil, put a candy thermometer in the pot, and stop stirring. Let it boil, without stirring, until it reaches 238 degrees Fahrenheit. Remove from the heat and let it cool until it is 160 degrees Fahrenheit. Once cooled, add vegan margarine, vanilla, and salt. Stir until the mixture begins to lose its shine. Quickly transfer to a small loaf pan (mine was 4×8 inches) lined with greased parchment paper, and spread smooth. (Do this a little sooner than I did–I waited a bit too long in the video.) Let cool- you can put it in the fridge to cool faster. Once cooled, cut into 30 small squares.

  1. this did not work for me. I let it cool to 160 but when I tried to stir in the butter and vanilla it was so hard to stir and it completely hardened before everything was stirred in. what happened?

  2. I can’t wait to try this. would you please add to your list a GF SF vegan butter cookie? my mother made these cookies during the holidays and I would like to make them but I can’t have dairy, eggs, gluten, or soy! If anyone can do it, I k ow you can. Thanks for the consideration. 🙂
