It’s moist and buttery, it’s loaded with dried and candied fruits (which is the way fruit cakes must be) and it’s nicely spiced with ground cinnamon, nutmeg, ginger, and cloves. But take note, this fruit cakes does not contain eggs.

  1. Hi i have two questions. First if we dont have brown sugar can we use carmalized sugar. If so how much sugar should we caramelise. Second question does the taste of cake vary if fruits are not socked or boiled. Can we use oil instead of butter . Have you made xmas fruit cakes with oil

  3. This is a really good cake. The first time I made it (this week) my husband thought it was a little dry. I made it again today. I added 1/4 cup honey, some chopped walnut and 1/2 tsp orange extract. OMG how good. Merry Christmas all you bakers!

I love your recipes, & your very-easy-to-follow instructions. I’ll let you know how they all come out. I’m going to try two versions of this cake: the one you’re sharing with us, & a coffee ‘buttermilk’ cake with raisins & pecans, for the holidays.
