Breakfast Souffle with spinach and artichoke (Panera Bread Style)


Loved the way these soufflés turned out.
for this recipe you will need,
First start by making the white roux sauce
half stick of butter, 1tbsp flour, pinch of salt, 1/5 cup of milk.
let it cool down before you proceed.
for the soufflé you will need
ramekins, puff pastry dough, eggs, spinach and artichoke dip
(I got mine from Costco)

  1. Not technically a souffle. Need to separate out the egg whites and beat them separately to stiff peaks then fold the yolks into the roux and then fold in the egg whites. This is more like a baked omelette. Still looms pretty good. Keep up the good work!

I have been dying to try and make the Panera Bread Style soufflé, so while planning my Brunch this Sunday I decided to make an attempt and googled “egg soufflé Panera Bread style and lo and behold after reading recipes etc I decided to go with Lucy Bittar’s. With Lucy’s recipe I had to change a few things. First the rouge I thickened with 2 TBS of flour instead of 1 TBS. Once the rouge was creamed, I then added 1 slice of swiss cheese and set it aside to cool. Another change I made was to add 1/2 cup of the spinach artichoke dip and one TBS. romano cheese. I experimented with a 4 and 1/2 inch tart pans and also large muffin tins. I used frozen Pepperidge Farm puff pastry which I cut in 4 squares and used a rolling pin to gently roll out a bit more to cover the tart pan (the large muffin pan I used as they were) The tart pans baked at 375 degrees for 40 minutes and the large muffin pans baked for 45 minutes. All of you out there Try these changes. My company absolutely loved them.

  3. Was the phyllo dough just a sheet cut into squares..or did you find some already cut? Thanks, looks great, oh where do you find the spinach/ artichoke dip?

  4. Nice Job! If you don’t like spinach, can you just do this with a cheese blend? I love S&A dip, but my wife does not, and I would be making them for her.

  5. oh my i love panera souffle…i will try out…what is the name of your oven & the pot of water you had boiling on the counter…i would love to purchase one ..tired of using my stove…Thank you so much
