Breakfast Mac ‘n’ Cheese


Adding hash browns and breakfast sausage gives you the perfect excuse to have mac ‘n’ cheese for breakfast or brunch.

INGREDIENTS:
2 cups elbow macaroni, cooked and drained
½ lb breakfast sausage, removed from casing and crumbled
½ cup red bell pepper, diced
3 Tbsp butter
¼ cup flour
2 ½ cups milk
Salt and pepper
1 cup grated mozzarella
1 cup grated cheddar
1 ½ cups frozen hash browns
Extra cheese for topping
Chopped chives as garnish

STEPS:
1.) Preheat oven to 400°F.
2.) Brown sausage in a large skillet. Remove and set aside for later.
3.) In same skillet, melt butter, and stir in flour until smooth. Slowly pour in milk and keep stirring until smooth and thick.
4.) Lower heat. Add cheeses and season with salt and pepper. Stir until cheese has melted. Stir in cooked pasta, breakfast sausage and red bell pepper. Top with frozen hash browns.
5.) Place skillet in oven and bake for 20–25 minutes, or until hash browns are golden and crispy.
6.) Serve with a garnish of chopped chives and hot sauce.
