This easy and fun to follow Gingerbread cookie recipe will create the best Gingerbread cookies for wonderful Christmas memories.
Ingredients for Gingerbread Cookie Dough
Large Batch of Cookies.
*1/2 Cup of dark or light molasses
*1 Cup lightly packed brown sugar
*14 Tbsp unsalted butter (1 stick + 6 Tbsp)
* Zest of 1 lemon
*4 tsp ground ginger
*2 tsp ground cinnamon
*1/2 tsp ground nutmeg
*1/4 tsp baking soda
*1/4 tsp ground cloves
*4 Cups all-purpose flour
*1 tsp salt
*1 Large egg lightly beaten
( makes about 1 1/2 Cups )
*2 Cups confectioners sugar
*1 large egg white lightly beaten
*1/2 tsp Lemon juice
*1 tsp of water
Note: you can alter the icing.
This is a stiff peak icing and can be altered to make soft peak and flooding icing. I used soft peak icing for all the decorating on these cookies
1) Flooding icing- use water and add 1 tsp at a time until your icing is thick and runny and smoothes out on its own within the peroid of 15 seconds but not to runny to where it runs off the edge of your cookie.
2) Soft peak- using water add a drop at a time until your icing hills a soft peak but does not spread on its own.
3) Stiff peak-follow exact royal icing recipe for this icing adding no additional water
