  2. Thank you for this post. I used dried raisins and abricots and around 100 gr of candied papaya in addition to pineaple otherwise everything absolutely according to the recipe. I don’t know what did I do wrong but my cake literally looked and felt like a brick and tasted really heavy and dense. Unless I figure out why I will not repeat this.

Hi Anja….many thanks for another delicious recipe to try (I got your book recently and I have it by my bed so I can look through it every day and decide what I will try that day) With regards to this Christmas cake, could you suggest something I could use other than ginger that would compliment all the other lovely flavours as I’m not a big fan of ginger….Thanks 🙂
