Banana Cake with Banana Strawberry Ice Cream. YUM

2 cups whole wheat flour
¾ teaspoon baking soda
¾ teaspoon baking powder
4 large ripe bananas
¼ cup date syrup
½ cup maple syrup
1/4 cup apple sauce
1 cup non-dairy milk
¼ cup tahini (sesame paste)
1 teaspoon lemon juice
Preheat oven to 180C or 350F
Mix dry ingredients
In a separate bowl mix the moist ingredients
Pour moist ingredients into dry ingredients and mix well
Use 1 teaspoon tahini to coat a baking dish or lightly use coconut oil if you prefer (Oil is not needed)
Pour batter into baking dish
Bake for 20-30 minutes depending on your oven.
3 very ripe bananas
3-5 large strawberries
Teaspoon vanilla extract
Freeze bananas and strawberries the night before
Put frozen fruit into food processor
Blend into smaller chunks
Add splashes of non-dairy milk and mix until you get to desired consistency. You will need to check ice-cream periodically while mixing to see if more milk is needed.
Add a splash of vanilla extract
Add a few dashes of ground cinnamon
Blend until ice-cream reaches desired consistency.
Preferred to make the ice-cream at the same time you’re getting ready to serve the cake.
