FIVE different & very healthy breakfast (or snack!) ideas for you to try! All the recipes are from nutritionist, Cara Clark. These are some of my favorites! Hope you enjoy!

All recipe’s are below!

1 Cup fresh or frozen strawberries
1/2 cup fresh or frozen mango
2 big handfuls of spinach
1 tsp matcha green tea powder
1 slice of fresh ginger or 1/2 tsp
3 Tbl cashews (soaked overnight if possible)
1/2 tsp vanilla extract
1/2-1 cup unsweetened nut milk (I used almond milk)

*Egg Scramble///
Chop your favorite veggies
Sauté on low heat
Scramble 2-3 eggs
Add to pan and scramble!
Top with seasoning, hot sauce & 1/4 avocado

*Overnight Oats////
Combine the following in a mason jar or pint size jar:
1/3 cup rolled oats
1/2 mashed, ripe banana
3/4 cup unsweetened almond milk
1 tsp maca powder
1-2 tbl cacao powder
1 Tbl Natural Peanut Butter (or other nut butter)
Stir/shake well. Top with 1 Tbl. chopped nuts. Seal Lid, and store overnight in the fridge. Enjoy chilled or warmed!

*Cottage Cheese & Avocado Toast////
1 Slice sprouted grain toast
Top with 2-3 Tbl 2% Cottage Cheese
2-3 slices of avocado, tomato slices and chopped green onion.
Salt & Pepper, and sprinkle hemp seeds

*Greek Yogurt Parfait////
1/4 cup berries
1/2 peeled and chopped kiwi
1/4 cup pineapple/mango (OR just do all berries!)
1/3 cup 2% plain Greek Yogurt
drizzle of raw honey or maple syrup
Repeat layers and top with 1/4 cup low sugar granola, 1 Tbl nuts + 1 tbl coconut

  2. These all looked so good and easy to make. We’re lucky to have a housekeeper come in early when we work mornings, but getting breakfast together on a work day is often a struggle with a toddler. I’m looking forward to trying some of these. I think our girl would like the yogurt parfait and overnight oats.
