BRUNCH RECIPE:
(Tofu Scramble)
You can find Amy’s Organic Tofu Scramble in the frozen aisle of your local grocery store, but if you prefer to make your own:
Simply just cut a few tofu slices; mash it into tinier pieces with a fork, and then pan fry it with veggies and seasonings of your choice!
(Pancakes)
1 ripe banana
1 cup almond milk
1 cup + 2 tbsp whole wheat flour (I usually do half wheat flour, half oat flour, but its up to you!)
1/2 tbsp baking powder
Dash of cinnamon and vanilla
(Waffles)
1 cup almond milk
1/2 oat flour
1/2 whole wheat flour
1/2 tbsp baking powder
1 banana
Dash of cinnamon and vanilla
I cook mine for 4 mins- depending on your waffle iron.

TOFU BURGERS:
Whole grain buns
Slices of tofu
Nutritional yeast
Italian Herb Seasoning
Garlic Powder
Chili Powder
Pepper
Pinch of salt
(*note: I don’t measure seasonings)
Coat slices of tofu with your mixture and pan fry it until brown on both sides; Or you can bake it at 350 for about 25-30 mins. making sure both sides are evenly baked.
Layer with veggies, guac, hummus, sriracha, anything you’d like!

PASTA SALAD:
Boil your pasta noodles
Chop up your veggies
Rinse your beans, chickpeas, etc.
Mix it all together and drizzle on some balsamic vinaigrette dressing
