Creamy Avocado Pasta (Makes 2 Servings)

1/2 Avocado
2 oz. Fresh Basil
2 Cloves Garlic
2 Tbsp Lime Juice
1 Tsp Agave
1/4 C. Coconut Aminos
1/4 C. Sundried Tomatoes
Salt & Pepper (to taste)
6 oz Cooked Spaghetti (I used gluten free)

Preparation Time: 5 Minutes
Cooking Time: 15 min to cook pasta

Fettuccine Alfredo (Makes 2 Servings)

Cashew Cream:
1/2 C. Raw Cashews (soaked in hot water for 15 minutes)
1 Tbsp Nutritional Yeast
1/2 C. Water

Recipe (On medium low heat for 8 to 10 minutes)
1 Tbsp Coconut Oil
3 Cloves Garlic (Chopped)
1/2 C. Chopped Crimini Mushrooms
1/2 C. Coconut Milk (from can)
Cashew Cream (see recipe above)
1 Tsp Garlic Powder
1 Tsp Italian Herbs or Herbes de Provence
Salt & Pepper (to taste)
1/4 C. Water
6 oz Cooked Fettuccine (I used gluten free)

Preparation Time: 5 Minutes
Cooking Time: 25 min (including 15 minutes to cook pasta)

Spicy Thai Noodles (Makes 3 Servings)

Roasted Tofu:
5 oz. Super Firm Tofu (cut in strips)
1/4 C. Coconut Aminos
1 Tbsp Corn Starch
Salt & Pepper (to taste)

Bake for 15 Minutes at 450F.

Peanut Sauce:
1 & 1/2 Tbsp Peanut Butter
3 Cloves Garlic (Chopped)
1 Tbsp Grated Ginger
3 Tbsp Lime Juice
2 Tbsp Agave Syrup
2 Tbsp Coconut Sugar
1/2 C. Soy Sauce

Noodles Recipe (on Medium Heat)
1 Tbsp Coconut Oil
1 Tsp Dried Red Pepper
1/2 C. Chopped Crimini Mushrooms
1/2 C. Red Bell Peppers
1/2 C. Shredded Carrots
1/2 C. Green Onions
Roasted Tofu (see recipe above)
8 oz Soaked Rice Noodle (I used the brand ‘A Taste of Thai’, I think it works best for this recipe – soaked for 20 minutes in hot water)
Peanut Sauce (see recipe above).

Preparation Time: 20 Minutes (including soaking noodles and roasting Tofu)
Cooking Time: 10 min
