These No-Bake Almond Butter Breakfast Cookies use just three ingredients and are gluten-free, dairy-free, and vegan. I love them as a grab and go breakfast or in the afternoon with a cup of coffee or tea.

3-INGREDIENT NO BAKE ALMOND BUTTER COOKIES
2 cups rolled oats
1 cup all natural almond butter (or any nut butter you like)
1/2 cup maple syrup

DIRECTIONS
Line a rimmed baking sheet with a silpat mat or coat with some cooking spray. Set aside.

In a large bowl, combine almond butter and maple syrup and microwave for 20 seconds to soften. Give it a good stir and then add in you oats.

Mix until all of the oats are coated in the almond butter/maple syrup mixture.

Scoop a heaping tablespoon of the dough and shape in your hands until you have formed a cookie. Place on baking sheet and repeat until you have 18 cookies.

Pop in the fridge for 30 minutes to set up and then transfer to an airtight container. Store in the fridge for up to 10 days. Enjoy!

  1. I sometimes make just one of these cookies, when I want one but not interested in doing an entire batch. I just sorta estimate proportions, and it turns out great. I bake it in a toaster oven on aluminum foil or an oven friendly plate. Thanks, Dani, for all your informative and fun videos! Sending best

  2. I’d probably use granola instead of the rolled oats not a big fan of rolled oats I grew up eating cream of wheat I’m one of those people who don’t like oatmeal or rolled oats lol I’ll give this a try def thanks Dani
